Creamy Baked Mashed Potatoes

Ingredients
  

  • 4 Potatoes medium
  • 6 cloves Garlic divided into 5 cloves and 1 clove
  • 4 oz Cream Cheese
  • 1/3 Cup Sour Cream
  • 1/3 Cup Milk more may be needed
  • 1 tsp Salt
  • As desired Black Pepper
  • 1 tsp Onion Powder
  • 1 tbsp Butter melted
  • As desired Paprika

Method
 

  1. Preheat the oven to 425 F / 220 C.
  2. Bring a pot of water to a boil.
  3. Peel the potatoes and cut them into chunks.
  4. Peel the garlic cloves.
  5. Add the potatoes and 5 garlic cloves to the pot of boiling water.
  6. Cook for 20 minutes or until a fork can easily pierce the potatoes. Drain the water.
  7. Mash the potatoes.
  8. Add the cream cheese, sour cream, salt, black pepper, and onion powder. Mix to combine.
  9. Add milk as needed. Stir vigorously until the potatoes are smooth and fluffy.
  10. Melt the butter and add 1 clove of minced garlic to it1.
  11. Pour the mashed potato mixture into an 8x8 baking dish. Spread the melted garlic butter on top and sprinkle with paprika as desired.
  12. Bake at 425 F for 30 minutes, broiling on high for the last 3 minutes.

Notes

1: Garlic Butter: You can omit the garlic clove in the butter if you want this side dish to be less garlicky. It'll still be delicious!
