Mild Vegan Chickpea Taquitos

Ingredients
  

  • 1 Can Chickpeas
  • 1 Yellow Onion small
  • 1 Jalapeño
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 3/4 tsp Smoked Paprika
  • 1/2 tsp Ground Cumin
  • 3/4 tsp Chili Powder
  • 2 tbsp Water or Vegetable Broth
  • 9 Corn Tortillas
  • 2.5 tbsp Canola Oil

Method
 

  1. Preheat the oven to 425 F / 220 C.
  2. Mince the onion.
  3. Mince the jalapeno.
  4. Drain and rinse the chickpeas.
  5. In a bowl combine the onion, chickpeas, jalapeno, broth, and seasonings. Mash together until you can see only a few individual chickpeas (or until you can see none-your preference!)
  6. Grease the frying pan and heat up the tortillas by letting them cook on medium heat for 10-20 seconds per side (until they feel warm, but not hot). Add more oil as needed.
  7. Put 2 generous tablespoons of filling into each tortilla and roll, placing them in a generously greased (roughly 1 tablespoon of canola oil) 9x9 baking dish.
  8. Add 1 tablespoon of canola oil to the tops of the taquitos and ensure they have no oil-less spots.
  9. Bake at 425 F for 20-25 minutes.
  10. Enjoy!
