Preheat the oven to 425 F / 220 C.
Option 1: Roll out your pie dough and, using a circle cookie cutter or a glass, cut out circles of pie dough.
Option 2: Roll out your pie dough scraps until they are the same thickness as if you were making a pie (1/8 inch thick).
Use a rubber spatula to transfer your pie dough to a baking sheet lined with parchment paper.
Prepare the pumpkin pie spiced sugar by mixing the sugar and pumpkin pie spice together in a bowl.
Using a pastry brush, brush melted butter onto each pie crust cookie.
Top each cookie with 3/4 tsp of the sugar mixture (or as much as you desire!).
Bake at 425 F / 220 C for 9-10 minutes.
