Pumpkin Spice Leftover Pie Crust Cookies

Ingredients
  

  • 1 Pie Crust store-bought or homemade
  • 1 tbsp Butter melted
  • 3 tbsp White Sugar
  • 1.5 tsp Pumpkin Pie Spice

Method
 

  1. Preheat the oven to 425 F / 220 C.
  2. Option 1: Roll out your pie dough and, using a circle cookie cutter or a glass, cut out circles of pie dough.
  3. Option 2: Roll out your pie dough scraps until they are the same thickness as if you were making a pie (1/8 inch thick).
  4. Use a rubber spatula to transfer your pie dough to a baking sheet lined with parchment paper.
  5. Prepare the pumpkin pie spiced sugar by mixing the sugar and pumpkin pie spice together in a bowl.
  6. Using a pastry brush, brush melted butter onto each pie crust cookie.
  7. Top each cookie with 3/4 tsp of the sugar mixture (or as much as you desire!).
  8. Bake at 425 F / 220 C for 9-10 minutes.
  9. Enjoy!
